Creamy Garlic Sharp Cheddar Grits

Cheddar Grits Recipe

I love creamy grits for dinner and for breakfast. My mother is from the south so I feel like grits run in my blood even though she doesn’t make them. I have finally got my husband on board with liking them as well with my creamy garlic sharp cheddar grits recipe.

Cheddar Grits Recipe

Ingredients:

  • 1/2 onion diced
  • 1 bell pepper
  • 2 cups ground grits
  • 2 1/2 cups chicken broth
  • 1 1/2 cups water
  • 2 tablespoons of butter
  • 3 cloves of garlic
  • 2 cups of half-and-half
  • 1 cup of grated cheddar cheese 
  • 2 green onion tops (to top the grits)
  • Salt and pepper to taste

Directions:

  1. Heat butter in a large sauce pan or dutch oven. 
  2. Add onion, bell pepper and garlic. Cook for five to seven minutes or until they become to begin soft.
  3. Add grits and stir.
  4. Add in chicken broth and water. Stir. 
  5. Bring to boil. Cover and reduce heat to low. Cook for 30 minutes and stir occasionally.
  6. After 30 minutes add in the half-and-half. Cook for another 30 minutes until grits are tender.
  7. Turn heat up and stir consistently for five to ten minutes depending on how thick you want your grits.
  8. Remove from heat and add in grated cheese. Stir. Add salt and pepper to taste.
  9. Plate and add the green onion tops.

I served my grits with steamed shrimp. I wish I had an amazing steamed shrimp recipe but I just use the recipe from the Old Bay seasoning box (1/2 cup water, 1/2 vinegar, a couple of tablespoons of Old Bay). It’s the best recipe I have found.

    Kale Chips

    Kale Chips

    Kale chips are super easy to make and crave your hunger for potato chips. We make them all of the time in our house and they are a great way to start your healthy eating for 2013.

    Ingredients:

    • Kale
    • Olive oil
    • Garlic, one clove, diced
    • Salt/Pepper

    Directions:

    1. Turn broiler on low.
    2. Wash kale and dry. Remove leaves from the stems. Tear into bite size pieces.
    3. Place on baking sheet. Drizzle olive oil, sprinkle garlic and add salt and pepper.
    4. Bake until edges are slightly brown. They should be crispy.
    5. Serve immediately.

    Favorite iPhone app: Shapely

    When I purchased my first iphone, I knew it would change my life. The great thing about it, the iphone continues to delight me to this day, with new apps and updates. The Shapely app was actually created and developed right here in Kansas City, by a wife and husband duo, Becca and Chris Jones. You can read more about their journey on their blog: Before and After Brookside. This app is pretty amazing. It lets you create logos and enhance images with shapes, text and additional shapes. I have only used it a few times, but I have so many ideas of how I can create more with it. To learn more about the app, check out their web site here.

    Here is one I created of Leila when she was playing in the snow a couple of weeks ago. She is so cute, its hard not to use her as my model. Another fun feature within the app is changing the texture of the image. On this one I used paper, so it looks like it was actually printed on a card stock.

    This is one of the first screens in the app, where you select the shape. You can upgrade and buy the full version for $1.99 to get even more shapes.  

    In this screen you can select the color/pattern of the border, as well as the actual background image/pattern/color.

    This is the screen of my gallery. As you can see, I created one for the holidays using one of the patterns provided within the app. 

    At the end of your creation it has options to share on all the social channels, making it easy to spread your creation among your friends. Hope you enjoy it as much as I do!
